Good Old Kiwi Curry

INGREDIENTS

  1. 4 x MED SIZE CHICKEN THIGHS
  2. 2 x MED RED ONION- DICED
  3. 5 x GLOVES GARLIC – FINELY DICED
  4. 2 x TBSP GINGER – FINELY DICED
  5. 1 x TBSP PAPRIKA
  6. 1 x TSP CAYENNE PEPPER
  7. 1 x TSP TURMERIC POWDER
  8. 2 x TBSP CUMIN POWDER
  9. 20ml CANOLA OIL
  10. 400ml COCONUT CREAM
  11. 400ml CAN CHOPPED TOMATO
  12. 100g FRESH CORIANDER- ROUGHLY CHOPPED

SHOPPING LIST

  1. Chicken Thighs (boneless)
  2. Red onion
  3. Garlic cloves
  4. Ginger
  5. Paprika
  6. Cayenne pepper
  7. Turmeric
  8. Cumin powder
  9. Canola oil
  10. Coconut cream
  11. Chopped tomatoes
  12. Fresh coriander

DIRECTIONS

  1. Cut chicken thighs into cubes.
  2. Heat pan on med/high with canola oil, when the pan is hot add chicken, onion, garlic and ginger.
  3. Cook until chicken is golden brown, add all the spices to the pan and coat the chicken with the spices.
  4. Add chopped tomatoes and bring to the boil then add coconut cream and coriander.
  5. Season with salt and pepper.
  6. Serve with steamed rice or a green salad.
